3 Chicken Recipes From India
1. Amla Active - Indian Gooseberry, Char-Grilled Chicken
This sour cherry is in season and superlatively healthy.
- Serves: 4
- Preparation time: 25 minutes
Ingredients:
- 6 amla or gooseberry, blanched
- 1 tomato, juliennes
- 2 cucumber slices, for garnish
- 2 onion slices, for garnish
- 3-4 spinach leaves
- 50 g curd or yogurt
- 50 g blanched amla (Indian gooseberry) paste
- Black salt, to taste
- 100 g Kashmiri red chilli paste
- 20 g mustard oil
- 10 g coriander powder
- 5 g cinnamon powder
- 100 g ginger-garlic powder
- 1 chicken leg
Method:
- Preheat the oven to 220°C.
- Meanwhile, combine curd or yogurt, blanched amla (Indian gooseberry) paste, black salt, red chilli paste, mustard oil, coriander powder, cinnamon powder, and ginger-garlic powder in a bowl.
- Marinate the chicken leg in this mix and let it rest for 10-12 minutes.
- Bake the chicken in the oven for 15 minutes or until it changes color.
- To plate, make a bed of spinach leaves in a serving plate and place the baked chicken on top of it.
- Garnish with fresh onion, cucumber, tomato juliennes and blanched wedges of amla or gooseberry.
- Serve hot.
2. Chicken Roast
A unique fried chicken recipe oozing with spices and flavors.
- Serves: 4
- Preparation time: 10 minutes
- Cook time: 60 minutes
Ingredients:
- 1 kg boneless chicken
To marinate:
- Salt, to taste
- 4-5 fresh green chillies
- 5-6 cloves garlic
- 1 tsp lemon juice/vinegar
- ¼ tsp coriander powder
- ¼ tsp chilli powder
- ¼ tsp turmeric powder
To roast:
- Oil, as required
- 1 tsp lemon juice
- ¼ tsp pepper powder
- ¼ tsp Garam masala powder
- 3-4 curry leaves
- 2 fresh green chillies, slit lengthwise
- 1 large red tomato, blanched, deseeded and pureed
- 3 onions
Method:
- Thoroughly wash the chicken under running water before cutting into bite-sized pieces.
- In a bowl, combine all the ingredients required to marinate.
- Add in the chicken pieces to this mix and let it sit for two hours.
- Thinly slice the onions and fry in cooking oil.
- Add chicken pieces to the same oil and continue to fry until cooked. Cover the pan if required.
- Drain the chicken pieces on a paper towel before keeping them aside.
- Heat 2-3 tbsp of cooking oil in a pan. Toss in the green chillies along with curry leaves once the oil is hot.
- Saute for a minute before adding the fried chicken. Continue to roast until chicken absorbs all the oil.
- Add salt and tomato puree and coat the chicken pieces. Sprinkle pepper powder along with garam masala powder.
- Drizzle a few drops of lemon juice and mix.
- Add fried onions and mix until well combined.
- Serve hot.
3. Chicken Popcorn
Flavorful, juicy and flavorful - this easy chicken recipe has it all!
- Serves: 4
- Preparation time: 10 minutes
- Cook time: 20 minutes
Ingredients:
- Oil, to deep fry
- 1 tsp garam masala powder
- ¾ tsp red chilli powder/cayenne powder/paprika
- ½ tsp onion powder
- ¼ tsp freshly ground black pepper powder
- ½ tsp garlic powder or ¾ tbsp ginger garlic paste
- Salt, to taste
- 1 cup panko crumbs or bread crumbs
- 2-4 tbsp yogurt/buttermilk or 1 egg
- 2 tbsp corn starch
- 250 g boneless chicken
Method:
Add salt, garam masala powder, garlic paste or powder, pepper, and chilli powder.
- Thoroughly wash the chicken under running water before cutting it into bite-sized pieces.
- Add the chicken pieces to the seasoning mix and coat well.
- Evenly coat the chicken pieces in corn starch before coating it with yogurt/buttermilk/egg until chicken pieces turn moist.
- Roll the chicken pieces in panko crumbs/bread crumbs. Repeat the process if you like your chicken extra crunchy.
- Let the chicken sit for 12-15 minutes.
- Meanwhile, heat oil to 375°F in a deep skillet.
- Fry the pieces in batches until crisp and golden.
- Remove on a paper towel and serve hot with a dip or sauce of your choice.
